Stuffed avocado, my idea of fast food

Sometimes I don't have time to cook. Actually, sometimes it's not just a time issue, but a lazy issue - sometimes I just don't feel like cooking. This is a super simple way to whip up something nutritious in minutes. You can make it any way you like. I happen to like olives, tomatoes and cheese, with a sprinkling of olive oil, lime juice, salt and sunflower seeds. Grab a spoon and dig in. You can even stand at the counter and eat it if you don't have time to sit.

One step even easier, fill it with a pre-made vegetable or salad blend from the salad bar or prepared foods counter. Look for organic and on-site house-made options. It's a meal at the ready, any time.
